The Deliciously Fun Silly Stuffed Bell Peppers Your Grandkids Will Love

Transform ordinary bell peppers into colorful, edible creatures with Silly Stuffed Bell Peppers! These adorable, nutritious treats are sure to be a hit with your grandkids.

Ingredients:

  • 4 large bell peppers (assorted colors)
  • 2 cups cooked brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1/2 cup diced tomato
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Slice the tops off the bell peppers and remove the seeds and ribs. Keep the tops for later!
  3. In a bowl, mix the rice, black beans, corn, tomato, cheese, cilantro, and cumin. Season with salt and pepper.
  4. Fill each bell pepper with the rice mixture, and place the pepper tops back on.
  5. Bake for 30-40 minutes, or until peppers are tender.
