Transform ordinary bell peppers into colorful, edible creatures with Silly Stuffed Bell Peppers! These adorable, nutritious treats are sure to be a hit with your grandkids.
Ingredients:
- 4 large bell peppers (assorted colors)
- 2 cups cooked brown rice
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1/2 cup diced tomato
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped cilantro
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions:
- Preheat oven to 350°F (175°C).
- Slice the tops off the bell peppers and remove the seeds and ribs. Keep the tops for later!
- In a bowl, mix the rice, black beans, corn, tomato, cheese, cilantro, and cumin. Season with salt and pepper.
- Fill each bell pepper with the rice mixture, and place the pepper tops back on.
- Bake for 30-40 minutes, or until peppers are tender.
