Shrink your favorite veggie burgers into bite-sized Marvelous Mini Veggie Burgers! These tiny, tasty treats are perfect for little hands and big appetites!
Ingredients:
- 2 cups cooked and mashed sweet potato
- 1 1/2 cups cooked quinoa
- 1 cup canned black beans, drained, rinsed, and mashed
- 1/2 cup finely chopped onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup breadcrumbs
- 1 tablespoon ground flaxseed
- 1 teaspoon cumin
- Salt and pepper to taste
- Mini whole wheat slider buns
- Optional toppings: lettuce, tomato, avocado, and pickles
Instructions:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix sweet potato, quinoa, black beans, onion, cilantro, breadcrumbs, flaxseed, and cumin. Season with salt and pepper.
- Shape the mixture into mini burger patties and place them on the baking sheet.
- Bake for 20-25 minutes, flipping halfway through, until golden and firm.
- Assemble your Marvelous Mini Veggie Burgers on the slider buns and add your favorite toppings.
