Happy Mother’s Day(week) to you! How do you like to celebrate your special day? If you are on here, I am betting it is with your family, so I pray you get just that! Now for the next question: What do you like to do?
There is no wrong answer here, but for me, it is brunch at my place with the entire family. Is this extra work for Grandma? For me, it is not, as I love to entertain and employ simple yet elegant brunch recipes that everyone can enjoy:
1. Smoked Salmon and Cream Cheese Bagels

Ingredients:
- 4 plain or everything bagels
- 8 oz cream cheese, softened
- 12 oz smoked salmon
- 1/2 red onion, thinly sliced
- 1/2 cup capers
- Fresh dill for garnish
Recipe:
- Slice the bagels in half and toast them to your desired crispness.
- Spread a generous layer of cream cheese on each bagel half.
- Top with smoked salmon, followed by red onion slices, capers, and a sprig of dill.
2. Asparagus, Prosciutto, and Poached Egg Tartines

Ingredients:
- 8 slices of sourdough bread
- 8 slices of prosciutto
- 16 asparagus spears, trimmed
- 8 large eggs
- 1/4 cup white vinegar
- Salt and pepper, to taste
- Olive oil, for drizzling
Recipe:
- Toast the sourdough bread slices.
- In a skillet, cook the asparagus in a little olive oil for 4-5 minutes or until tender. Season with salt and pepper.
- Fill a large skillet with water and add white vinegar. Bring to a gentle simmer, then crack each egg into a small bowl and carefully slide them into the water. Poach the eggs for 4-5 minutes or until the whites are set but the yolks are still runny.
- Top each slice of toasted bread with a slice of prosciutto, two asparagus spears, and a poached egg. Drizzle with olive oil and season with salt and pepper.
3. Mini Spinach and Feta Frittatas

Ingredients:
- 6 large eggs
- 1/2 cup heavy cream
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup baby spinach, chopped
- 3/4 cup crumbled feta cheese
- 1/2 cup diced red bell pepper
Recipe:
- Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
- In a bowl, whisk together eggs, heavy cream, salt, and pepper.
- Stir in spinach, feta cheese, and red bell pepper. Mix well.
- Divide the mixture evenly among the muffin cups, filling each about 3/4 full.
- Bake for 20-25 minutes, or until the frittatas are set and golden. Allow them to cool for a few minutes before serving.
4. Yogurt Parfait Bar

Ingredients:
- 32 oz Greek yogurt
- Assorted toppings: granola, honey, fresh berries, chopped nuts, and dried fruit
Recipe:
- Set out bowls of yogurt and various toppings.
- Allow guests to build their own parfaits by layering yogurt and their choice of toppings in a glass or bowl.
5. Avocado Toast with Cherry Tomatoes and Balsamic Glaze

Ingredients:
- 8 slices of whole grain bread
- 4 ripe avocados, mashed
- 1 cup cherry tomatoes, halved
- Balsamic glaze, for drizzling
- Salt and pepper, to taste
Recipe:
- Toast the bread slices.
- Spread a generous layer of mashed avocado on each toast slice.
- Top with cherry tomato halves and drizzle with balsamic glaze. Season with salt and pepper.
6. Overnight Strawberry Cream Cheese-Stuffed French Toast

Ingredients:
- 1 loaf of French bread, cut into 1-inch slices
- 8 oz cream cheese, softened
- 1/2 cup strawberry jam
- 4 large eggs
- 1 cup milk
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/4 tsp ground cinnamon
- Powdered sugar and extra maple syrup for serving
Recipe:
- In a small bowl, mix cream cheese and strawberry jam until well combined.
- Spread the cream cheese mixture evenly on half of the bread slices, then top with the remaining slices to create sandwiches.
- In a large bowl, whisk together eggs, milk, maple syrup, vanilla extract, salt, and cinnamon.
- Dip each sandwich into the egg mixture, coating both sides. Arrange the sandwiches in a baking dish and pour any remaining egg mixture over them.
- Cover the dish and refrigerate overnight.
- The next morning, preheat the oven to 375°F (190°C). Bake the French toast for 25-30 minutes, or until golden brown and cooked through.
- Serve warm, dusted with powdered sugar and drizzled with extra maple syrup.
7. Caprese Salad Skewers

Ingredients:
- 16 cherry tomatoes
- 16 fresh basil leaves
- 16 small mozzarella balls
- 1/4 cup balsamic glaze
- Salt and pepper, to taste
Recipe:
- Thread a cherry tomato, a basil leaf, and a mozzarella ball onto each skewer.
- Arrange the skewers on a serving platter and drizzle with balsamic glaze. Season with salt and pepper.
8. Fresh Fruit Salad with Honey-Lime Dressing

Ingredients:
- 3 cups mixed fresh fruit (strawberries, blueberries, pineapple, kiwi, and grapes)
- 1/4 cup honey
- 2 tbsp fresh lime juice
- 1/2 tsp poppy seeds (optional)
Recipe:
- In a large bowl, gently mix the fresh fruit.
- In a small bowl, whisk together honey, lime juice, and poppy seeds.
- Drizzle the dressing over the fruit salad and toss gently to combine. Refrigerate until ready to serve.
